Ube's deep purple comes from anthocyanins — the same family of plant pigments found in blueberries and blackcurrants. Purple yam contains acylated forms of them, which is also why the colour survives drying and milling without any dye.

UBI + YAM. "Ubi" is how ube is spelled across much of Southeast Asia, and ube is a purple yam — so we simply put the two together. One name, one ingredient.

That is the proof it is real. Ube's colour comes from anthocyanins — the same pigments as in blueberries — and they shift with pH. Oat milk, dairy and almond milk each give you a slightly different purple. A food dye would not move at all.

No, and they are not even related. Ube (Dioscorea alata) is a yam whose flesh is purple all the way through, and it tastes sweet and vanilla-ish. Taro is white with purple flecks and tastes starchy. Most "ube" desserts you have had were taro plus purple dye.

Ube is high in resistant starch — starch with small, dense granules that digests slowly rather than releasing all at once. There is no added sugar; the 7.5g per 100g is what occurs naturally in the yam. If you manage a condition such as diabetes, check with your doctor about how it fits your plan.

Probably — they are not similar. Matcha is grassy and bitter and usually needs sugar to be drinkable. Ube is naturally sweet with vanilla and hazelnut notes and does not need anything added. "I am not a matcha person" is one of the most common things new customers tell us.
